
Allergy-Friendly Low-Trigger Cake
Flavor numerous ways but get the base recipe right with this take on Depression-Era Wacky Cake, originally created due to ingredient scarcity, this recipe makes a fabulous foundation for your favorite desserts.
Ingredients
- 1 3/4 cup cassava or gluten-free flour
- 1 cup coconut sugar
- 1 tbsp baking soda
- 1/2 tsp salt
- 1 tbsp distilled vinegar
- 5 tbsp extra virgin olive oil
- 1 cup water
Instructions
- Combine dry ingredients in mixing bowl and mix thoroughly
- Add wet ingredients and stir to combine until batter is smooth
- Grease baking dish (I use parchment paper in the bottom of the pan & brush the top with olive oil).
